Today
First off, let’s talk about what yumminess (and healthiness) was today:
Breakfast: 2 scrambled eggs with salsa on top, green tea, and an avocado.
Lunch: Chicken veggie rice (I’ll put the recipe at the end of this)
Dinner: Salmon stuffed with couscous (If I hadn’t bought this from Trader Joe’s, I would totally put the recipe at the end of this post. But I did buy this from Trader Joe’s, so my recipe is: shop at Joe’s). A little bit of nutella for dessert.
Now let’s talk about exercise. Today I’m doing upper body weights (exercises courtesy of @mnturk) and running. I’m not doing a ton of running cause I’ve been fighting some sort of sickness, so just 20 minutes of running today, and 20 minutes of walking.
And now we reach the shitty part of my day: homework. Today was dedicated to fixing up my legal writing memo. It’s the first graded memo, and is the bane of my existence. But it’s coming along nicely. Tomorrow is mainly touch up work - fixing citations, fixing legal grammar and punctuation rules, and making it exactly 4 lines shorter. LOL. A rollicking good time shall be had by all.
Chicken veggie rice recipe (I just sort of made this up, so do what you like):
1/2 chicken breast
1/4 cup of white rice
1 egg
1/2 bell pepper
Trader Joe’s balsamic vinaigrette (as a marinade type thing)/soy sauce (it tastes good with either)
You cook the chicken breast, cut up, and after it’s mostly cooked put some of the vinaigrette in there with it, as well as the bell pepper (and whatever other veggies you might like) so that they’re all cooking together. Then once the chicken is cooked, put the egg in and scramble it up with everything. Then put over rice. Cooks quickly, tastes soooooo yummy and is pretty healthy.
